Ingredients

  • 1.5 cups green chickpeas (cooked)
  • 1 small cucumber (diced)
  • ½ red onion (thinly sliced)
  • 1 tomato or handful cherry tomatoes (chopped)
  • 2 tbsp parsley or mint (chopped)
  • ½ tsp ground cumin
  • 1 tbsp olive oil
  • Juice of 1 lime or lemon
  • Salt & pepper

Instructions

  1. Combine all salad ingredients in a bowl.
  2. Whisk lime juice, cumin, olive oil, salt, and pepper.
  3. Pour dressing over salad. Toss and chill before serving.
