Ingredients
- 1.5 cups green chickpeas (cooked)
- 1 small cucumber (diced)
- ½ red onion (thinly sliced)
- 1 tomato or handful cherry tomatoes (chopped)
- 2 tbsp parsley or mint (chopped)
- ½ tsp ground cumin
- 1 tbsp olive oil
- Juice of 1 lime or lemon
- Salt & pepper
Instructions
- Combine all salad ingredients in a bowl.
- Whisk lime juice, cumin, olive oil, salt, and pepper.
- Pour dressing over salad. Toss and chill before serving.
