Cheesy Edamame Bites

Kid-friendly mini bites packed with protein from edamame and cheese - perfect for lunchboxes, snacks, or as a fun appetizer for the whole family.

Ingredients

  • 1½ cups shelled edamame (cooked and mashed)
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ cup breadcrumbs or oat flour
  • 1 egg
  • Salt to taste
  • Garlic powder to taste
  • Optional: 1 tbsp grated carrot or zucchini for extra veggies
  • For serving: ketchup or yogurt sauce for dipping

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. Cook edamame if not already prepared, then mash thoroughly with a fork or potato masher.
  3. In a mixing bowl, combine mashed edamame with shredded cheese, breadcrumbs or oat flour, and egg.
  4. Add salt and garlic powder to taste.
  5. If using, mix in grated carrot or zucchini for extra nutrition.
  6. Mix all ingredients until a soft dough forms.
  7. Roll mixture into 12 balls or press directly into mini muffin tin cavities.
  8. Bake for 15-18 minutes until golden brown on top.
  9. Cool slightly before removing from tin.
  10. Serve warm with ketchup or yogurt sauce for dipping. Great for lunchboxes!
