Ingredients
- 1½ cups shelled edamame (cooked and mashed)
- ½ cup shredded cheese (cheddar or mozzarella)
- ¼ cup breadcrumbs or oat flour
- 1 egg
- Salt to taste
- Garlic powder to taste
- Optional: 1 tbsp grated carrot or zucchini for extra veggies
- For serving: ketchup or yogurt sauce for dipping
Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- Cook edamame if not already prepared, then mash thoroughly with a fork or potato masher.
- In a mixing bowl, combine mashed edamame with shredded cheese, breadcrumbs or oat flour, and egg.
- Add salt and garlic powder to taste.
- If using, mix in grated carrot or zucchini for extra nutrition.
- Mix all ingredients until a soft dough forms.
- Roll mixture into 12 balls or press directly into mini muffin tin cavities.
- Bake for 15-18 minutes until golden brown on top.
- Cool slightly before removing from tin.
- Serve warm with ketchup or yogurt sauce for dipping. Great for lunchboxes!
