Creamy Edamame Miso Soup

A velvety smooth soup combining the nutty flavor of edamame with umami-rich miso paste - can be served as a warming soup or thick dip for vegetables.

4 servings (soup) or 2 cups (dip)

Ingredients

  • 1 cup shelled edamame (cooked)
  • 2 cups vegetable broth (½ cup for dip version)
  • 1 tbsp white miso paste
  • 1 tbsp tahini or silken tofu
  • ½ clove garlic (optional)
  • Salt to taste
  • For garnish: green onions, sesame seeds, or chili oil

Instructions

  1. Cook edamame if not already prepared and let cool slightly.
  2. In a blender, combine cooked edamame, vegetable broth, miso paste, tahini or silken tofu, and garlic (if using).
  3. Blend until completely smooth and creamy.
  4. For soup: Transfer to a saucepan and warm over medium heat, stirring occasionally. Do not boil to preserve the beneficial properties of miso.
  5. Adjust salt to taste, or add a splash of soy sauce for extra umami.
  6. Serve hot topped with chopped green onions, sesame seeds, or a drizzle of chili oil.
  7. For dip version: Use only ½ cup broth for a thicker consistency.
  8. Blend as above and refrigerate until ready to serve.
  9. Serve as a protein-rich dip with fresh vegetables, crackers, or as a spread.
