A refreshing cold salad featuring shelled edamame, sweet corn, and colorful vegetables with a zesty lime dressing.

Ingredients

  • 1 cup shelled edamame (cooked)
  • 1 cup corn kernels (fresh, frozen, or grilled)
  • ½ red bell pepper (diced)
  • 2 tbsp red onion (minced)
  • 2 tbsp cilantro (chopped)
  • Juice of 1 lime
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Combine edamame, corn, bell pepper, onion, and cilantro in a bowl.
  2. Whisk lime juice, olive oil, salt, and pepper in a small bowl.
  3. Toss with the salad. Chill and serve.
