Ingredients
- 1 cup shelled edamame (cooked)
- 1 cup corn kernels (fresh, frozen, or grilled)
- ½ red bell pepper (diced)
- 2 tbsp red onion (minced)
- 2 tbsp cilantro (chopped)
- Juice of 1 lime
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Combine edamame, corn, bell pepper, onion, and cilantro in a bowl.
- Whisk lime juice, olive oil, salt, and pepper in a small bowl.
- Toss with the salad. Chill and serve.
