Edamame Pesto Pasta

A vibrant, protein-rich twist on traditional pesto using edamame beans blended with fresh basil for a creamy, nutritious pasta sauce.

Ingredients

  • 1 cup shelled edamame (cooked)
  • 2 cups fresh basil (or spinach)
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 2-3 tbsp olive oil
  • 2 tbsp grated Parmesan or nutritional yeast
  • Salt & pepper to taste
  • 12 oz pasta of your choice
  • Optional: cherry tomatoes or grilled chicken for topping

Instructions

  1. Cook pasta according to package directions, reserve ½ cup pasta water before draining.
  2. In a food processor or blender, combine edamame, basil, garlic, lemon juice, and olive oil.
  3. Blend until smooth, adding more oil if needed for desired consistency.
  4. Stir in Parmesan or nutritional yeast, and season with salt and pepper to taste.
  5. Toss the cooked pasta with the edamame pesto, adding pasta water to thin if needed.
  6. Serve immediately, optionally topped with cherry tomatoes or grilled chicken.
