Ingredients
- 1 cup shelled edamame (cooked)
- 2 cups fresh basil (or spinach)
- 2 tbsp lemon juice
- 1 clove garlic
- 2-3 tbsp olive oil
- 2 tbsp grated Parmesan or nutritional yeast
- Salt & pepper to taste
- 12 oz pasta of your choice
- Optional: cherry tomatoes or grilled chicken for topping
Instructions
- Cook pasta according to package directions, reserve ½ cup pasta water before draining.
- In a food processor or blender, combine edamame, basil, garlic, lemon juice, and olive oil.
- Blend until smooth, adding more oil if needed for desired consistency.
- Stir in Parmesan or nutritional yeast, and season with salt and pepper to taste.
- Toss the cooked pasta with the edamame pesto, adding pasta water to thin if needed.
- Serve immediately, optionally topped with cherry tomatoes or grilled chicken.
