Ingredients
- ½ cup shelled edamame
- ½ cup canned chickpeas (rinsed and drained)
- 1 tbsp tahini or Greek yogurt
- 1 tbsp lemon juice
- Salt & pepper to taste
- 2 whole wheat wraps or lettuce cups
- Optional: lettuce, tomatoes, cucumber for filling
Instructions
- Cook edamame if not already prepared, then let cool slightly.
- In a bowl, mash edamame and chickpeas with a fork until chunky but combined.
- Stir in tahini or Greek yogurt and lemon juice until well mixed.
- Season with salt and pepper to taste.
- Spread the mixture onto whole wheat wraps or spoon into lettuce cups.
- Add any additional vegetables like lettuce, tomatoes, or cucumber if desired.
- Roll up wraps tightly or serve in lettuce cups immediately.
