Ingredients

  • ½ cup shelled edamame
  • ½ cup canned chickpeas (rinsed and drained)
  • 1 tbsp tahini or Greek yogurt
  • 1 tbsp lemon juice
  • Salt & pepper to taste
  • 2 whole wheat wraps or lettuce cups
  • Optional: lettuce, tomatoes, cucumber for filling

Instructions

  1. Cook edamame if not already prepared, then let cool slightly.
  2. In a bowl, mash edamame and chickpeas with a fork until chunky but combined.
  3. Stir in tahini or Greek yogurt and lemon juice until well mixed.
  4. Season with salt and pepper to taste.
  5. Spread the mixture onto whole wheat wraps or spoon into lettuce cups.
  6. Add any additional vegetables like lettuce, tomatoes, or cucumber if desired.
  7. Roll up wraps tightly or serve in lettuce cups immediately.
