Ingredients
- 2 cups cooked rice (cold)
- 1 cup shelled edamame
- 2 eggs (optional)
- 1 cup diced vegetables (e.g., carrots, peas, onion)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 green onion (sliced)
Instructions
- Heat sesame oil in a pan. Sauté veggies until soft.
- Push veggies to the side, scramble eggs (if using).
- Add rice and edamame. Stir-fry until hot.
- Add soy sauce. Mix well and top with green onion.
