Ingredients

  • ½ cup shelled edamame (steamed or thawed)
  • ½ ripe avocado
  • 1 tsp lemon juice
  • Salt, pepper, and chili flakes to taste
  • 2 slices whole-grain bread
  • Optional toppings: sliced radishes, cherry tomatoes, or a poached egg

Instructions

  1. Steam or thaw the edamame if not already prepared.
  2. In a bowl, mash the edamame and avocado together with lemon juice, salt, and pepper until desired consistency.
  3. Toast the whole-grain bread to your preference.
  4. Spread the edamame-avocado mixture generously onto the toasted bread.
  5. Top with chili flakes or everything bagel seasoning.
  6. Add optional toppings like sliced radishes, cherry tomatoes, or a poached egg for extra flavor and nutrition.
